Salmon filets with orange sauce and fresh salad

Ingredients

  • 4 salmon filets
  • 1 cup Arla® Whipping Cream
  • Juice from ½ orange
  • Zest from ½ orange
  • 5 orange slices, peeled and cut in half
  • 1 curly green salad
  • 1 lollo rosso salad
  • 3 tbsps fill, finely chopped
  • Some olive oil
  • Salt
  • Freshly ground pepper

Directions

Cut salmon filets into small cubes and sprinkle salt and pepper.

Warm a non-stick pan and bake salmon for 8-9 minutes until it gets a nice golden colour. Add the salmon pieces on a serving plate and with some paper, swipe the fat off the pan.

Stir in a bowl the whipping cream, the juice and the orange zest. Warn pan on medium heat and let the whipping cream mixture to simmer for 2-3 minutes. Add in the pan the salmon pieces and gently stir, leaving them for 2-3 more minutes.

Serve salmon with fresh salad, that you have already washed with plenty of water and have added dill, salt, orange pieces and some olive oil. Serve salad in plates and add the salmon pieces, around it pouring over them the orange sauce from the pan.

Advice

If the orange juice is sour you can add a little bit of brown sugar. To make the flavours a bit more zingy, add some zest (1 ½ tsp) from a ginger root.
